Aloxe Corton - 2023 - Domaine Pavelot

2023 - Aloxe Corton 1er cru - Domaine Pavelot - Red 75cl
 Located in the place called Les Combes d'Aloxe-Corton on the edge of Pernand and under the hillside of Corton-Charlemagne.
 Planted on a slightly stony brown soil that drains well with fine silts, where there are more compact clays at the bottom of the plots with an average limestone level. This context is conducive to regular and generous production.

 The resulting wine is fine and light, with a nice complexity for a village. Still focused on red fruit, it opens up quickly after bottling.
 Grape variety: Pinot Noir
 Area: 0.30 hectares
 Average age of the vines: 42 years
 Vinification: Hand-harvested. The grapes are transported in traditional wicker baskets and sorted in the winery on a vibrating table.
 Depending on the phenolic maturity of the vintage, vatting can be done with 20 to 40% whole bunches.
 After a gentle maceration of between 3 and 5 days, alcoholic fermentation begins thanks to indigenous yeasts in open concrete vats for approximately 15 days.
 Punching down during full fermentation then pumping over to promote gentle extraction.
 Aging: In the cellar, 10 months in French oak barrels, 20% of which are new and the others have 1 to 5 wines.
 Racking and blending in enamelled vats for 7 weeks before bottling at the estate without filtration.
 Average annual production: Around 2000 bottles.
