In the soul of Clos Saparale. This wine revives the old Corsican tradition of vineyards planted with all the traditional grape varieties and a single, unsorted harvest. The production conditions are very demanding, with a high planting density of 8,000 plants per hectare (on average in Corsica, more like 4,000).
The diversity of its grape varieties, which covers most of the grape varieties present in Corsica in precise proportions, opens the path to “Great Wines” for CLOS SAPARALE.
The Terroir here becomes the conductor who controls and inspires in all the ranges all the performers (rootstocks and grape varieties, all the conditions of the vintage and even the winemaker!) in the service of a unique score: the pure expression of the Terroir.
Grape varieties
Massive selection of Vermentino, Pagadebitti, Genovese, Cualtacciu, Rossola Bianca and even the very rare Carcaghjolu Biancu!
Climate: Topographically, it is a hilly terrain with plots exhibiting North-East exposures as well as plateaus.
Cool exposures have the advantage of reducing the risk of over-ripening while preserving the necessary acidity. Geologically, the soils are based on granodioritic plutonism dominated by very old granites rich in micas and quartz.A method: The hillside plots are managed organically and plowed several times a year using a crawler. Short pruning and manual disbudding are practiced. The desired yield is only about 500g of grapes per vine (compared to 1500 on average) in order to obtain maximum concentrated grapes. Fermentation takes place in wooden tuns for about thirty days, then the wines are aged in sandstone jars for a year. The bunches are harvested manually in small crates to protect the integrity of the berries. These are stored in a cold room overnight, in order to reach the optimal temperature of 12°C before being pressed.
Serving: This white wine with its powerful, intense body should be served at a temperature of 10-12°C, i.e. slightly chilled. It goes well with fish in sauce or a white meat dish (poultry, sweetbreads).
