Cuvée Terra di Spartera

The Terra di Spartera cuvée comes from a 100% Biancu Gentile plot planted on hillsides on clay-limestone soil. The vineyard is cultivated entirely organically, with short pruning, disbudding, trellising, and leaf removal carried out manually. The harvest is also entirely manual, ensuring careful sorting of the grapes.

Vinification and Aging
The whole bunches are gently pressed. Fermentation is spontaneous, carried out with indigenous yeasts and without the addition of oenological products. The wine is not filtered in order to preserve all of its aromatic and textural integrity. It is aged on fine lees for 6 months in stainless steel vats, which reinforces its texture and minerality.

Tasting
Visually, the color is pale yellow with slight golden highlights. The wine is slightly cloudy, a sign of its natural and unfiltered character.
On the nose, it stands out for its expressiveness and complexity, revealing aromas of ripe citrus fruits and a subtle chalky note that evokes its clay-limestone terroir.
On the palate, the attack is frank and lively, marked by a beautiful minerality that intensifies on the finish while maintaining a beautiful fullness. The absence of filtration brings a rich and authentic texture.

This vintage pairs perfectly with:
• Appetizer: Shellfish (oysters, clams), sashimi or white fish carpaccio
• Starters: Sea bream ceviche, langoustine tartare
• Dishes: Sea bass fillet, John Dory, sea urchin cream risotto
