AOC Ajaccio - White Vermentinu 75cl - 2024
"Tarra d'Alma" is a white wine full of purity, minerality, finesse and elegance.
This white wine is made from a single grape variety, Vermentinu.
The grapes are harvested manually in small 10kg perforated crates, then cooled, before being gently pressed into whole bunches in a low-pressure pneumatic press.
After natural decantation, the must is vinified in stainless steel vats using our yeast cream. The resulting wine is then aged in small, hand-crafted 160-litre terracotta jars for a period of 6 months.
Why jar farming?
The choice of terracotta for its minerality, because during prolonged aging, osmosis occurs between the wine and its container; and for the expression of a terroir without artifice, because unlike wood, clay does not impose its organoleptic palette on the wine.
The other reason is the high porosity of the container which accelerates the evolution of the wine, we are less on the exuberance of the fruit and more on the subtlety.
And finally its ovoid shape: a natural vortex is formed which allows the lees not to settle, this natural stirring, induced by this flow, will bring just the right amount of substance to this vintage which we want to be very fine.
When tasted, this wine, with its pale yellow color and silver highlights, presents an initial mineral nose of flint, which gives way to a second, subtle nose of white fruits.
On the palate we find white peach, just the right amount of fat, a slight bitterness typical of Vermentinu and a most appreciable saline finish.
