After a gentle maceration of 3 to 5 days, alcoholic fermentation begins under the action of indigenous yeasts in open concrete vats for approximately 18 days. Punching down of the cap during full fermentation then pumping over to promote gentle extraction and refine the tannins. Aging: In the cellar, 12 months in French oak barrels, on lees. 45% new barrels; the other barrels have 1 to 4 wines. Racking and blending in vats for 4 months. Second racking before bottling at the estate, without filtration. Average annual production: Approximately 4,500 bottles.
