It seems hard to imagine that polenta was once considered a poor man's dish. A staple dish of the mountain pastures, it was a dish for those who had to make good use of the few ingredients available. Polenta was shared with whatever was available: cheese, a tomato, and sometimes a piece of meat... A warming dish that served to warm both body and soul. We want to bring you a little of that family warmth, but with a decidedly less poor sauce, to be enjoyed in winter by the fireplace or even in summer... For this kindness, there is no season.
