Its berries are harvested at peak ripeness, then immersed in a freshwater bath to remove the skin, revealing the creamy-white peppercorn. Along with Kampot peppers, it is the only pepper to have a PGI (Protected Geographical Indication).
 Profile: Penja white pepper has a pronounced taste and a woody aroma. It grows in the volcanic soils of Penja and gives off fresh aromas of menthol and camphor.
 Use Like all quality peppers, Penja white pepper is intended to be used daily in your cooking to season white fish, poultry or cheese etc.
