Vadouvan is a mixture of Indian condiments and spices. It originates from Pondicherry, and was formerly a South Indian recipe called Vadavam which consists of small balls of spices made from sun-dried onions and which season traditional dishes.
Profile Vadouvan is a blend with very sweet, unique, rich, very aromatic and not too spicy flavors. This mixture is composed of Onion, Garlic, Sesame Oil, Cumin, Curry Leaf, Mustard Seeds, Urad Dahl (a variety of lentil), Fenugreek, Turmeric, Fennel , of fetid Ase and of Salt.

Use Vadouvan is enjoyed with mussels marinière or baked fish. Like a curry powder or paste, it can be used with meats in sauce.
