 Kalamansi: This citrus fruit, native to Southeast Asia, is a cross between the kumquat and the mandarin. Perfect as an accompaniment to duck products (breast, foie gras, gizzards, etc.) in vinaigrette or as a deglazing agent. A must-have for accompanying scallops, in carpaccio, or as a deglazing agent at the end of cooking. A subtle touch in desserts or fruit salads.
